A Better Way to Taste the Rainbow

June 17, 2015
By Annie Norman , Fort Myers Beach Bulletin, Fort Myers Beach Observer

Eating right and exercising are two of the most important things you can do for your health, and a major part of any healthy lifestyle.

Having a healthy diet means eating a variety of fruits and vegetables to supply your body with the nutrients that it needs to function at its very best. Eating a rainbow of fruits and vegetables is a fun way to get a variety of vitamins and minerals.

Phytonutrients give fruits and vegetables their colors. Red fruits and veggies are colored by lycopene, and may also contain flavonoids, vitamin C, and folate, which are good for heart health and memory. Orange and yellow ones contain carotenoids, such as beta-carotene, as well as vitamins A and C, and help with eye and heart health and immune function. Chlorophyll colors the green fruits and vegetables. These may also be sources of vitamin K, carotenoids, omega-3 fatty acids, folic acid, potassium and isothiocyanates for healthy bones, teeth and eyes. Blue and purple fruits and vegetables contain anthocyanins, good for memory and healthy aging. White foods contain flavonoids that help with heart health and cholesterol levels.

Next time you visit the produce aisle be sure to get a variety of colors, so you can really taste the rainbow!
